Rub a dub dub- Wet rub for your meats

Friday, I was really craving a nice medium rare beef which got me thinking about different ways that one can season a piece of meat. I could go on for pages about different seasoning and cooking techniques used for different meats in different dishes but this is not the time nor the place for that is it.

This is all about the rub.

This rub has such potential for different proteins like pork, chicken...heck put it on some lamb I bet it would be delish, but today I'm showing how it looks on a beautiful piece of beef before its cooked because I might have gotten a little too excited about dinner to take photos afterward.

The recipe might sound like it has a lot of ingredients but its really pretty simple and has so much room for variation to put your own flare on it for whatever dish you might be pairing it with.

Ingredients

  • 3T Olive Oil
  • 2 Sprigs Fresh Oregano: stems removed and minced
  • 1T Minced Thyme
  • 1t Onion Powder
  • 1t Garlic Powder
  • 1T Minced Garlic
  • 1.5t Black Pepper
  • 1.5 t Smoked Paprika
  • 1 T Salt
  • 1 Small Lemon: zest and juice

Instructions

  1. Chop the oregano and thyme to a roughly uniform size. You want to make sure that your herbs are releasing those wonderful oils.
  2. Add the olive oil, zest, and juice of the lemon and stir so that they are all incorporated. This will help keep the herbs from browning.
  3. At this point add the rest of the seasonings and mix well. The mixture will be very thick and chunky but that's ok!
  4. If you think that there is not enough oil you may add more, it won't hurt anything.
